Multivarietale 0.75L – ORGANIC EXTRA-VIRGIN OLIVE OIL

We produce our oils from indigenous varieties from the north-Barese area, which have spread over time to different areas of southern Italy and beyond. The Peranzana is characterised by a lower intensity, perfect for anyone who favours a milder oil in the kitchen. In our Multivarietale 0.75L EVO Oil, we have blended Peranzana and Coratina to obtain a light fruitiness, ideal for dishes with more delicate flavours. We harvest and when they reach the right level of ripeness, a time that differs depending on the variety. Afterwards, the two oils are blended to obtain a light fruity EVO oil.

PRODUCTION PROCESSES OF OUR MULTIVARIETALE ORGANIC EXTRA VIRGIN OLIVE OIL

The quality of Olio Angelino depends on a meticulous approach to every step of production. After harvesting, the olives are promptly transported to the oil mill. Extraction takes place cold within 8 hours of harvesting. Timing is crucial to avoid oxidative processes that would alter the flavour and nutritional qualities of the product. When the vegetative cycle of our olive trees is interrupted (between February and April), they are regularly pruned. Finally, ICEA, the organic farming control body, certifies the product as 100% organic.

Multivarietale 0.75L- FILTRATO O NON FILTRATO?

To ensure maximum product durability, we subject our oils to a filtering process. This is done using filtering cartons, which remove the impurities responsible for the characteristic ‘sedimemt’ present in unfiltered oils. By removing these particles, we prevent oxidation processes that could alter the organoleptic properties of extra virgin olive oil, keeping its quality intact over time.
