Our Extra Virgin Olive Oil (EVOO), s made from the Coratina olive tree in the foothills of Alta Murgia , the area surrounding Minervino Murge.

PROPERTIES OF OUR 0.25L EXTRA VIRGIN OLIVE OIL

Olio Angelino,made from this particular variety is a product rich in poliphenols., molecules that arise in the plant’s metabolic processes capable of counteracting our body’s oxidation processes. Scientific research and analysis has observed that oleocanthal (contained in polyphenols) is surprisingly effective in preventing cancer and coronary heart disease. The presence of this particular element can be noticed in the balanced spiciness and bitterness, which is typical of Coratina olive oil.

PRODUCTION PROCESSES OF OUR 0.25L EXTRA VIRGIN OLIVE OIL

The organic aspect of Angelino oil depends on a meticulous approach to every step of production. Monitoring starts from the harvesting stage, during which the olives are promptly collected from the nets, in which they would ferment if left for a long time; up to the cold extraction stage (to avoid reaching temperatures that would alter the flavor and nutritional qualities of the product), without any chemical treatment. When the growing cycle of our olive trees is interrupted (in the time span between February and April) they are regularly trimmed. Each step of the production process is subjected to the strict control of ICEA, who certifies the product as 100% organic.
